Hello sweet friends!
As many of you know, I'm a Certified Nutritionist turned Holistic Health Coach and although I love food, I'm not really one for creating recipes. I'll leave that to many of my insanely creative colleagues like Mandy King of Healthy Eating and Living and Jesse Lane Lee of Jesse Lane Wellness (and many others!). BUT, I love to find interesting, delicious and most of all SIMPLE recipes online and thought: why not share my yummy findings with you guys!
The world wide web is a fantastic source for new ideas, information and motivation when it comes to food, so I thought that when I come across some interesting pages and recipes I'll bookmark them and then every month or so, I'd share them with you, my incredible community.
Because well, SHARING IS CARING!
So let's kick this new series off with a few of the recipes I absolutely LOVED from the last month...
1. Anything involving CAULIFLOWER RICE (trust me!)
I'm alllllll about a good veggie swap and cauliflower rice is my newest obsession! I've been eating cauliflower ever since I discovered you could roast it with curry powder back in nutrition school. Mind literally BLOWN. But using cauliflower as rice? Serious gamechanger! For any of you babes who are gluten or grain free, this is a great way to turn your favourite dishes into a veggie packed and low carb meal. Because I couldn't pick just one, I thought I'd share Well + Good's awesome list of 10 cauliflower rice dishes.
2. Rosemary Chicken Bacon and Avocado Salad
You had me at BACON. Well, bacon + avocado. It's basically a dream team in my opinion. I love this recipe because it is so so easy, tastes delicious and is perfect when you're tight on time and want something that will fill you up and keep you satisfied for hours. It's all that delicious healthy fat, I mean come on - creamy avocado, crispy bacon, chicken that is to.die.for - slam dunk! Perfect for anyone who feels like they're in a salad rut. I could basically eat this every day. Jessica from How Sweet It Is, I salute you!
3. Paleo Avocado Chocolate Bread
Yes, you read that correctly. This recipe from Adriana from Living Healthy With Chocolate is paleo, gluten free, grain free, dairy free and UNBELIEVABLY delicious. You guys, I literally had to harness the will of gawd to not eat the entire pan. I made these into muffins on account of the fact that after doing a little taste test of the batter, I KNEW I would have portion control issues. Ha! It worked really well though and I'd definitely recommend muffins for simplicity sake. You are most welcome!
4. Coconut Fat Balls
I have no idea how I started following Lee Tilghman aka @leefromamerica, but I found her and I totally adore her. Plus she makes the yummiest recipes, her insta-stories are always fun and she always manages to pour the perfect matcha latte or smoothie. Literally, makes just enough to fill her cup to the brim every single time. It's like magic. ANYWAY, she posted about these coconut fat balls and I had to try them. Guys, they are SO good and so simple to make. And this recipe makes like 2 dozen, so you've got snacks for dayyyyyyz. Try 'em and let me know your thoughts!
5. Creamy Coconut Almond Milk Matcha Latte
I love matcha and ever since I've been following the Queen of Matcha herself, Candace Kumai - who for the record is like the sweetest, most genuine and big hearted human on social media - I've developed a newfound relationship for this delicious powdered form of green tea. What makes her version of a matcha latte literally to die for is dollop of coconut butter you put into it. So delicious and satisfying! Swap this out one day for your morning java and let me know what you think!
